Vegetarianism

 


 

Not surprisingly it began with a dedicated Yoga practice.  I was brought up eating meat and to enjoy "fine dining".  The fancier the dish the more it should be appreciated....veal, foie gras, frogs legs etc.  In my teen years where I learned the cruelty behind these specialty items I could no longer eat them yet I continued to eat "regular" meat.

Then I quit doing aerobics (which I never enjoyed) and began doing Yoga.  No one told me to stop eating meat....it just happened organically.....as if I was absorbing the ancient teachings through the physical practice.  First I could no longer eat the flesh of a pig.  This was difficult as some of my best recipes involved bacon! 


 

Then some years later I could not eat the flesh of any mammal.  This was an easy step for me to take however it was difficult for my family.  Although they are supportive and understanding I am the only vegetarian in my family. 

I have found it challenging to find recipes that satisfy my husband and 2 children

So here are some of my crowd pleasing favourites

Yammaritos

Jessica emailed me this recipe from London, Ontario.  My family and I love it!!!  Thank you so much for sharing this with me and for allowing me to post it and share with others! Namaste

Instead of the ground beef in burritos or tacos use a cheese shredder to shred a sweet potatoe (about 1 big one for two people!) Heat in the frying pan with a little EVOO and a little cumin! Spoon into a whole wheat wrap and Top with onion salsa, sour cream, tomatoes, avocado- whatever you like!

Kickin' Quinoa

 

1 cup rinsed quinoa

1 and 1/2 cups water

1/2 chopped large sweet onion

2 minced garlic cloves

2 celery stalks chopped

pinch cayenne pepper

Herbamare to taste

( or salt & pepper)

1 red bell pepper chopped

1 zucchini chopped

2 carrots chopped

1 28oz can diced tomatoes

1 and 1/4 cup veg. stock

1 tsp. chilli powder

1 tsp. oregano

grated old cheddar cheese

Place rinsed quinoa in a pot with water and bring to a boil.

 Reduce to medium low and cover until cooked. 

Meanwhile in a large pot sauté onions and garlic until soft. 

Add celery and carrots and stir for a few minutes. 

Then add everything else. 

Bring to a boil, reduce to medium and simmer covered for 10 minutes.

  Add cooked quinoa and serve with grated cheddar on top. 

Great with some multigrain bread on the side!

 

(P.S.  I know yogis should avoid onions and garlic
